2018 Dairy Apprenticeship

About the Position:

Begins: March 19, 2018

Ends: November 21, 2018

Stipend: $10.00 an hour with paid overtime

Housing: Housing provided as available

Meals: Cook your own meals with our produce, eggs, meat and dairy

The Dairy Apprentice will start off learning husbandry specific to dairy goats and sheep, then the focus will shift to production as the season progresses.  This Apprentice will participate in all aspects of our farmstead creamery production: milking goats, pasteurization, cheese and caramel making, dish washing, equipment and facility cleaning/maintenance and packaging/labeling.  They will have the opportunity to gain an understanding of the principals of cheesemaking; proper cleaning and sanitation methods; food safety planning and record keeping; and government regulations.  Our current production is focused on fresh pasteurized goat cheeses and goat milk caramel.  This is unique opportunity to participate in a start-up creamery as we establish our product line.

Skills Desired:

This position is best suited for someone who is interested in a career in farmstead cheesemaking.  At least 1 year of experience working in sanitary food preparation or handling is desired.  Previous cheesemaking or livestock handling experience is a plus, but not required.  Some weekend and holiday work may be required.  Applicants should be adept at following directions, have good attention to detail and be comfortable learning the technical aspects of cheesemaking, which involves some chemistry.

About the Program:

Carversville Farm Foundation (CFF) is a non-profit farm that combines ecological regeneration and agricultural production to serve our environment as well as our community. We currently distribute our farm products to soup kitchens and food pantries in the greater Philadelphia area to help improve access to wholesome, locally grown foods. CFF also sells some of its products. We are in the early stages of creating a diversified farm with intensive cover cropping, multi-species grazing, dairy, hay, vegetable, fruit and mushroom production.

Our apprenticeship program is designed as an introduction to regenerative land management. This includes learning to see the land holistically, beginning with an in-depth assessment of our ecological and cultural context. Apprentices will work a minimum of 40 hours/week with our full-time farmers on every aspect of production, and will also have the opportunity to attend workshops, classes, and trainings on and off the farm to support their professional development in regenerative agriculture.
